The relationship between the consumption of hyper-palatable ultra-processed foods and the process of addiction gains notoriety due to its relationship with obesity. Food addiction is a complex phenomenon intrinsically related to the individual's behavioral, emotional, and subjective aspects. Therefore, using classical approaches to sensory science may be insufficient to understand better the individual's sensory experience with hyper-palatable foods. In this context, sensory and consumer science techniques with holistic approaches have been aimed at accessing more subjective consumer perceptions. This study used the Yale Food Addiction Scale (YFAS 2.0) to investigate the prevalence of food addiction and the Structured Projective Mapping (S-MP) and Sorting techniques to verify how individuals with and without food addiction perceive and understand different types of food. The prevalence of food addiction was 21.77% (n = 59 out of 271) and was associated with a higher BMI but not with sociodemographic aspects. Projective Mapping (RV = 0.937) and Sorting (RV = 0.934) indicated that perception in relation to attributes such as health and pleasure was similar for all investigated foods in individuals with or without food addiction. The presence of addictive eating behavior does not seem to be related to the way individuals perceive foods from different categories, for example, minimally or highly processed and hyper-palatable foods.

Researchers recognize the silent, negative and deleterious effects caused by mercury pollution in gold mining areas. Freshwater turtles are culturally part of the diet of riverside populations in the Amazon region and this area presents mercury (Hg) pollution issues mainly due to gold mining activities. Thus, this research aimed to evaluate the total mercury (THg) content in the different organs of Amazonian giant river turtle (Podocnemis expansa) and carry out a human health risk assessment associated with the consumption of these animals. This study was conducted in the Vila Balbina, municipality of Presidente Figueiredo, state of Amazonas, Brazil. Skin (n = 28), muscle (n = 19) and brain (n = 2) samples were analyzed by Atomic Absorption Spectrometry (TDA-AAS) and a DMA-80™ mercury analyzer was used for the total mercury determinations. The average values found for THg in the skin, muscle and brain samples were, respectively, 0.1045 mg·kg-1, 0.1092 mg·kg-1 and 0.0601 mg·kg-1. Thus, THg was observed even though the P. expansa were kept in captivity, possibly due to previous contamination by air, water and food. The Hazard Quotient (HQ) was calculated considering a 9.07 g·day-1 intake dose of P. expansa and the consumption of turtles once a week showed an HQ = 2.45, which may cause long-term injuries to human health. Although the muscle concentrations were below the maximum limit established by the World Health Organization (WHO) and Brazilian regulatory agencies, it is important to evaluate consumption factors such as amount ingested, frequency and animal gender, which may cause a potential risk to regular consumers due to mercury bioaccumulation. The WHO may consider various aspects in order to warn the Amazon population about the severity and silent hazard of this metal, especially due to the importance of this matrix in the region. This region urgently needs government actions to inhibit clandestine mining and to prevent future serious, chronic health problems of the entire population.

This research aimed to optimize surimi production with innovative raw materials called pirarucu trimmings and broken rice grains, which are by-products from food industries. The effects of three independent variables (number of washing cycles, content, and cooking temperature of rice flour-RF) on surimi's physical, chemical, and technological qualities were investigated through a Box-Behnken design. The number of washing cycles affected yield (77-93%), moisture (55-67%), lipids (18-35%), protein (7.15-11.88%), whiteness (46.73-64.45), chroma (8.86-13.18), hue angle (80.79-93.12°), cohesiveness (0.40-0.61), springiness (0.51-0.99), and freeze stability after 4 weeks (85.16-96.53%). RF concentration affected moisture, lipids, cohesiveness, springiness, and freeze-thaw stability after 4 weeks. RF cooking temperature affected moisture, chroma, cohesiveness, and springiness. The optimal conditions for surimi production with high yield and overall quality were three washing cycles, 6% of RF, and RF cooking temperature at 85 °C. It reveals the promising potential of both by-products to be used as an ingredient in restructured products and contribute to improving agri-industry sustainability.

With the rise of a consumer market increasingly concerned with food and healthy lifestyle habits, the search for functional products has increased in the last years. In this context, dairy products are relevant since they are already included in the consumer's diet. Furthermore, hydrolyzed collagen stands out among products with bioactive action, as it promotes the reduction of the incidence of arthritis, osteoporosis, hypertension, obesity, and premature aging and contains healing, antioxidant and antimicrobial properties. In addition to health benefits, the addition of these ingredients to dairy products can influence physical, chemical, rheological, microbiological, and sensory characteristics, such as: decreased syneresis and improved texture of fermented milks; viscosity increase in dairy beverage; increased proteolytic activity in cheeses; and increasing the viability of probiotics, without significantly altering the quality standards of the legislation. Despite the benefits described, more studies are needed to evaluate these effects in different dairy products.

Milk and dairy products present considerable socioeconomic importance but are also a regular pesticide residue contamination source, which is considered a worldwide public health concern and a major international trade issue. Thus, a literature review was conducted to assess pesticide residue levels in milk and dairy products, as well as the residue degradation capacity during its processing. Organochlorine, organophosphate, synthetic pyrethroid and/or triazine were found in fluid milk, powder products, yogurts, cheese, butter, and sour cream. Thermal processing reduced most residue levels, although some treatments increased total hexachlorocyclohexane and its isomers (α-, γ-, δ-, and ß-). Emerging non-thermal treatments presented promising results, but some by-products had higher toxicity than their precursors. Biodegradation by lactic acid bacteria were effective during yogurt and cheese fermentation. However, ß-hexachlorocyclohexane level seems to increase in yogurts containing Lactobacillus acidophilus and Bifidobacterium animalis subsp. lactis, while increase or maintenance of pesticide residue concentration was observed during coagulation and cheese maturation. Deep research is needed to understand the isomerization and degradation mechanisms after thermal, non-thermal, and fermentation processing. Emerging heat technology can be an excellent topic to be investigated for pesticide residues degradation in the future. These mitigation approaches can be a feasible future alternative to milk and dairy production.

In recent years, many studies have been conducted to develop functional meat products, focusing on strategies to maximize health-promoting compounds and reduce the presence of those that may cause negative impacts on the consumer's health. As such, the use of prebiotic, probiotic, and synbiotic agents in meat products has grown considerably. In addition, the use of new generation probiotics in meat products is a novel field that can be explored. With the most recent paraprobiotics/postbiotics update, several components could be tested in meat products. Some interventional studies using meat products added with biotic agents have shown great potential as functional foods by reducing the formation of nitrous compounds in the gut and improving the functionality of the gut microbiota. Although there are few studies focusing on synbiotic meat products, the results are also very promising in this field. As such, this review seeks to describe how probiotics, prebiotics, paraprobiotics and postbiotics can be employed in meat products to give them functional properties, as well as some of the major issues that may arise when using these agents.

Multielement concentrations (P, S, Cl, K, Ca, Cr, Mn, Fe, Ni, Cu, Zn, Rb, and Rh) and total mercury (T-Hg) were analyzed in different organs and tissues of Amazonian manatee (Trichechus inunguis). Samples of 27 T. inunguis specimens, maintained in the collection of the Amazonian Center for the Research and Preservation of Aquatic Mammals, were used, situated in an area highly impacted by gold mining in the northern region of the Brazilian Amazon. Samples of aquatic plants used as food by the animals were also analyzed. The elements S, Cl, K, Cr, and Mn accumulated mainly in the musculature, while Fe and Cu were more concentrated in the liver. Trace elements, such as rubidium (Rb) and rhodium (Rh), not previously reported in the organs of animals of the family Trichechidae, were also identified. The averages for T-Hg in the skin, muscle, encephalon, liver, kidney, and lung samples were, respectively, 0.1540 ± 0.1332, 0.0593 ± 0.1044, 0.0517 ± 0.0467, 0.0486 ± 0.0543, 0.0237 ± 0.0336, and 0.0013 ± 0.0032 µg.g-1. The values obtained for the vibrissae samples were below the limit of quantification, which allows for the conclusion that this tissue cannot be used as a contamination marker. It was observed that even when kept in a conservation breeding site, these animals were exposed to non-essential trace elements. Differences in the accumulation of elements were observed between the different organs and tissues analyzed. The presence of contaminants in animals that live in a preservation center, even at low levels, deserves attention.

This study has as objective to determine total mercury (Total Hg) levels by atomic absorption spectrophotometry in 134 individuals edible part of Mullus argentinae, in two different fishing areas and two seasons in Rio de Janeiro State. Also, proximate composition was performed. Total Hg results in wet weight basis ranged from 0.0867 to 0.7476 µg.g-1 in muscle; 0.0023 to 0,1034 µg.g-1 in flippers; and 0.0177 to 0.1849 µg.g-1 in skin. Mean evaluated moisture was 73.39%; protein was 18.76%; lipid concentration of 5.36%; carbohydrates of 2.35%; and ashes were 0.85%.Results showed that Total Hg contents was lower than accepted limits established by regulatory organization. Higher averages were observed in muscle (0.2441 µg.g-1) when compared with skin (0.2386 µg.g-1) and flippers (0.0195 µg.g-1). In general, samples collected on summer showed higher values of total Hg when comparing to winter. Regarding beach areas there was no significant difference (p>0.05). We can conclude that this specie should be cautious consumed because of total Hg bioaccumulation characteristics, although neither levels were above limits established.


O objetivo deste estudo foi determinar o teor de mercúrio no tecido comestível de Mullus argentinae, conhecido como peixe trilha, espécie amplamente consumida no Rio de Janeiro, Brasil. Foi determinado o teor de mercúrio total (Hg total) por espectrofotometria de absorção atômica em 134 amostras, coletados em duas áreas e estações climáticas diferentes. Além disso, foi avaliada a composição centesimal das amostras. Os resultados de Hg total em peso úmido variaram de 0,0867 a 0,7476 µg.g-1 no músculo; 0,0023 a 0,1034 µg.g-1 nas nadadeiras; e 0,0177 a 0,1849 µg.g-1 na pele. Os valores médios da composição centesimal foram de 73,30% de umidade, 18,76% de proteína, 5,36% de lipídios, 2,35% de carboidratos e 0,85% de matéria mineral. Os resultados das 134 amostras analisadas demostraram que os teores de Hg Total apresentam concentração inferior aos limites aceitos pelos órgãos reguladores. As maiores médias foram observadas no músculo (0,2441 µg.g-1) quando comparadas à pele (0,2386 µg.g-1) e nadadeiras (0,0195 µg.g-1). Em geral, as amostras coletadas no verão apresentaram maiores valores de Hg total em relação ao inverno. Em relação aos locais de coleta não houve diferença significativa (p> 0,05). Podemos concluir que esta espécie deve ser consumida com cautela devido às características de bioacumulação do Hg total, apesar das médias apresentadas estarem abaixo dos limites estabelecidos pela legislação.

This study investigated the physicochemical, instrumental and bacterial parameters of tilapia fillets subjected to oxygen-scavenger packaging, alone or in combination with UV-C radiation at two doses (0.102 and 0.301 J/cm2), stored at 4 ± 1 °C for 23 days. The oxygen scavenger, both UV-C doses, and the oxygen scavenger combined with UV-C, independently of the dose, extended the shelf life in 5, 6 and 7 days, respectively, by decreasing the bacterial growth rate and the formation of degradation compounds (e.g., TVB-N and ammonia). Oxygen-scavenger packaging, alone or in combination with UV-C at 0.102 J/cm2 and 0.301 J/cm2 showed lower amounts of free amino acids (FAA; 34.39, 34.49 and 34.50 mg L-lysine/kg fish tissue, 3.63, 3.57 and 3.61 mg L- ornithine/kg fish tissue, 27.52, 27.63 and 27.67 mg L-arginine/kg fish tissue), biogenic amines (BA; 3.81, 3.87 and 3.89 mg cadaverine/kg fish tissue, 12.88, 12.91 and 12.86 mg putrescine/kg fish tissue, 2.41, 2.44 and 2.47 mg spermidine/kg fish tissue), redness (2.53, 2.55 and 2.59), yellowness (6.65, 6.69 and 6.72), lipid oxidation (1.52, 1.53 and 1.58 mg malondialdehyde/kg fish tissue) and protein oxidation (5.06, 5.11 and 5.18 nmol carbonyls/mg protein), with higher hardness (3273.41, 2652.98 and 2687.57 g) than control (air packaging; 41.97 mg L-lysine/kg fish tissue, 4.83 mg L- ornithine/kg fish tissue, 37.33 mg L-arginine/kg fish tissue, 4.82 mg cadaverine/kg fish tissue, 16.56 mg putrescine/kg fish tissue, 3.21 mg spermidine/kg fish tissue, 4.26 of redness, 8.17 of yellowness, 2.88 mg malondialdehyde/kg fish tissue, 9.44 nmol carbonyls/mg protein and 2092.58 g of hardness), respectively, on day 13 of storage when the control fillets were unfit for consumption (7 log CFU/g) (p < 0.05). However, in the same day of storage, both UV-C doses had similar values for BA (p > 0.05), higher amounts of FAA (44.28 and 44.13 mg L-lysine/kg fish tissue, 5.16 and 5.12 mg L- ornithine/kg fish tissue, 40.20 and 40.28 mg L-arginine/kg fish tissue), redness (4.86 and 5.33), yellowness (9.32 and 10.01), lipid oxidation (3.09 and 3.52 mg malondialdehyde/kg fish tissue) and protein oxidation (10.27 and 11.93 nmol carbonyls/mg protein), as well as lower hardness (1877.54 and 1767.39 g), respectively, than control fillets (p < 0.05). The combined preservation methods were the most effective in extending the shelf life and prolonging the physicochemical quality of the refrigerated tilapia fillets and the O2 scavenger proved to be a potential alternative to prevent the negative changes induced by both UV-C doses.

In the present study, nonfat yoghurt made with whey protein isolate (WPI) or pasteurized egg white powder (albumin) was added with syrup containing jaboticaba pulp and lyophilized jaboticaba peel flour and six experimental groups were made: control yoghurt (CY); WPI yoghurt (WY); albumin yoghurt (AY), syrup yoghurt and WPI (WSY); syrup and albumin yoghurt (ASY) and syrup yoghurt (SY). This study aimed to verify the influence of the addition of fruit syrup on the phenolics compounds and on the instrumental color parameters of yoghurts made with proteins on the 1st and 28th day of storage. There was a significant decrease in total phenolics content in yoghurt containing WPI and syrup (from 1408.14mg GAE.L-1 to 686.73mg GAE.L-1), as well as total anthocyanin content. However, yoghurt containing syrup and albumin showed an increase in total flavonoid content on day 28 of storage (from 28.30mg QE.100g-1 to 38.29mg QE.100g-1). Regarding color, there was an increase in L* and b* values in yoghurt containing syrup and WPI and in yoghurt containing syrup and albumin. For a* values, a decrease was observed at the end of the storage period in samples containing protein (WPI or albumin) and syrup. The data showed that the addition of jaboticaba syrup to yoghurts containing different proteins provided different phenolics compounds contents at the end of the storage period, and different color parameters to the final product.


No presente estudo, iogurtes desnatados feitos com proteína isolada do soro do leite (PIS) ou albumina isolada da clara do ovo pasteurizada em pó (albumina) foram adicionados de xarope contendo a polpa da jabuticaba e a farinha liofilizada da casca da jabuticaba, obtendo-se seis grupos experimentais: iogurte controle (CY); iogurte PIS (WY); iogurte albumina (AY); iogurte xarope e PIS (WSY); iogurte xarope e albumina (ASY) e iogurte com xarope (SY). Neste estudo objetivou-se verificar a influência da adição do xarope da fruta nos compostos fenólicos e nos parâmetros instrumentais de cor dos iogurtes elaborados com proteínas no 1oe 28o dia de armazenamento. Houve uma diminuição significativa no teor de fenólicos totais no iogurte contendo PIS e xarope (de 1408.14mg GAE.L-1para 686.73mg GAE.L-1), bem como no teor de antocianinas (de 158.45mg cyanidin-3-glucoside.L-1para 56.45mg cyanidin-3-glucoside.L-1). No entanto, os iogurtes contendo xarope e albumina apresentaram um aumento no teor de flavonóides totais no 28o dia de armazenamento (de 28.30mg QE.100g-1para 38.29mg QE.100g-1). Em relação a cor houve um aumento dos valores de L* e no valor de b* no iogurte contendo xarope e PIS e no iogurte contendo xarope e albumina. Já para os valores de a* foi observado uma diminuição ao final do período de armazenamento nas amostras contendo proteína (PIS ou albumina) e xarope. Os dados demonstraram que a adição do xarope de jabuticaba a iogurtes contendo diferentes proteínas proporcionaram diferentes conteúdos de compostos fenólicos ao final do período de estocagem, e diferentes parâmetros de cor ao produto final.

Marine fish are considered a source of high quality proteins and fatty acids. However, the consumption of fish may pose a health risk as it may have potentially toxic elements in high concentrations. In this study we quantify the multielemental composition of muscle and fins for three species of commercial marine fish from Brazil: Sphyraena guachancho (Barracuda), Priacantus arenatus (Common bigeye) and Genidens genidens (Guri sea catfish). We then assessed the potential risk of fish consumption by means of a Provisional Hazard Indices. Amongst the elements detected in fish tissue were potentially toxic elements such as Ag, Ba, Cd, Cr and Hg. Concentration differences were species-specific, and affected by the species trophic level, morphological characteristics and feeding habits. Results suggest the higher the trophic level of the fish, the higher the risk of consumption. Caution is recommended for the frequent ingestion of high trophic level fish species in Brazil.

O mercúrio é um dos principais contaminantes ambientais, sendo a ação antrópica, tanto industrial quanto de garimpo de ouro no Norte do país, responsável por uma parcela expressiva desta contaminação. Extremamente tóxico, o mercúrio pode acometer o sistema nervoso central e levar a óbito. O consumo de peixes contaminados é umas das principais fontes de exposição humana. Foram analisadas 15 amostras de tecido muscular de tucunarés, capturados no reservatório de Balbina (Presidente Figueiredo), no analisador direto de mercúrio (DMA - 80®). Todas apresentaram contaminação mercurial acima do permitido pela legislação (1mg/Kg de mercúrio total). Os valores mínimo e máximo encontrados foram, respectivamente, 1,08mg/Kg e 6,79mg/Kg. Não foi constatada correlação entre peso e comprimento dos peixes com a concentração de mercúrio total dos mesmos.

Parâmetros de qualidade de peixes marinhos e dulcícolas tem sido foco de muitas polêmicas, e até alvo de problemas jurídicos em empresas de beneficiamento. Objetivou-se avaliar as alterações físico-químicas de trutas arco-íris por meio de análises de pH, NH3 e BVT, por um período de 10 dias em refrigeração. Foram examinadas 10 trutas inteiras, capturadas em um pesque pague da região serrana do Rio de Janeiro. Após captura, os animais foram eutanasiados e acondicionados em recipiente isotérmico com gelo. Foi avaliado o pH em quatro diferentes porções musculares, analisado também as BVT e NH3. Não foram observadas diferenças significativas dos resultados de pH entre as porções avaliadas, com exceção da ventral. Conclui-se que em 10 dias de armazenamento de trutas inteiras e refrigeradas os parâmetros físico químicos são satisfatórios.

A indústria de alimentos pet está em constante expansão e vêm seguindo as tendências da alimentação humana, com o objetivo de promover benefícios para a saúde dos animais e satisfação aos tutores. A introdução de compostos naturais na formulação de rações permite a redução da ingestão de aditivos químicos, transgênicos e a possibilidade de ofertar ao animal uma dieta equilibrada e funcional. Desta forma, o presente estudo teve como intuito realizar análises: bromatológica, físico-química e a influência da adição da farinha de uva na validade comercial de um biscoito canino natural. Os resultados foram considerados satisfatórios conforme a legislação vigente. Em virtude disso, a adição da farinha de uva promoveu retardo da oxidação lipídica, contribuindo para o aumento de nove dias da validade comercial.

Dentre os metais pesados de maior preocupação para saúde humana e animal, tem-se o mercúrio, cuja forma orgânica é a mais agressiva aos sistemas. A fonte mais comum de adquirir tal metal é através do consumo de pescado e seus derivados, sendo que para os pets (animais de companhia) a ingestão é via rações formuladas com tal matriz alimentar. Logo, foram feitas análises através do DMA 80 de tal elemento em distintas rações comerciais no município de Niterói para avaliar a qualidade do produto ofertado. Os resultados para as rações úmidas de peixe apresentaram 80% em desacordo com a legislação vigente para alimentos humanos, sendo necessário mais estudos e uma legislação específica para mercúrio para alimentação animal.

Este estudo determinou o teor total de mercúrio (HgT) em 69 atuns em conserva de 13 marcas comercializadas no sudoeste do Brasil. Todos os valores são reportados em µg.g-1 de peso úmido. O potencial de risco para a saúde foi estimado com base na concentração de mercúrio e consumo médio (175 g / semana) de peixes no Brasil em comparação com ISPT de 1,6 µg.kg-1 (FAO / WHO, 2010). Uma grande variação na concentração de mercúrio em diferentes espécies foi observada. A concentração média de mercúrio foi de 0,256 ± 0,215 µg.g-1 com maior valor de 1,060 µg.g-1 em uma única lata. Em geral, a concentração média foi inferior à legislação de 1,0 µg.g-1 para espécies predadoras (BRASIL, 2014). A ingestão semanal estimada (EIS) variou de 0,2 a 1,7 µg.kg-1. Para as marcas analisadas de consumo de peixe no Brasil, não há ocorrência de risco à saúde humana. No entanto, uma marca foi superior a ISPT de 1,6 µg.kg-1, não mostrando segurança para o grupo de risco específico. Serão necessários mais estudos, incluindo dados específicos sobre o consumo de atum em conserva em populações específicas, bem como o tipo de peixe, tamanho e local de pesca.

This study investigated the effects of high hydrostatic pressure (HHP) and ultraviolet radiation (UV-C), individually and combined, on the physical, chemical and bacterial parameters of Nile tilapia (Oreochromis niloticus) fillets stored at 4 °C for 14 days. Tilapia fillets were divided into four groups: control (untreated samples), UV-C, HHP, and UV-C combined with HHP (UV-C+HHP); UV-C was applied at dose of 0.103 ± 0.002 J/cm2, and HHP at a pressure of 220 MPa for 10 min at 25 °C. All samples were analyzed for total aerobic mesophilic count (TAMC), total aerobic psychrotrophic count (TAPC), Enterobacteriaceae count, pH, lipid oxidation, total volatile basic nitrogen (TVB-N), ammonia (NH3), and biogenic amines. Although UV-C accelerated (P ≤ 0.05) the formation of cadaverine, both UV-C and HHP, alone or together, retarded bacterial growth and delayed the increase (P ≤ 0.05) in pH, TVB-N, NH3 and biogenic amines during refrigerated storage, extending the shelf life of refrigerated tilapia fillets at least 2.5 times considering the TAMC counts. Lipid oxidation was unaffected (P > 0.05) by UV-C radiation, and decreased (P ≤ 0.05) by HHP and UV-C+HHP. HHP alone or combined with UV-C showed higher potential benefits for tilapia fillets preservation considering the positive influence on cadaverine levels and lipid oxidation.

A produção e consumo de pescado vem crescendo nos últimos anos, com algumas espécies ganhando destaque no cenário nacional como o híbrido Colossoma macropomum X Piaractus brachypomum (tambatinga) e o Brycon microleps (piraputanga). Dados sobre a composição centesimal e teste aceitação são de suma importância para inferir sobre o potencial mercadológico dessas espécies. Sendo assim, o objetivo deste estudo foi disponibilizar dados relativos a composição centesimal, aceitação sensorial, com escala hedônica estruturada de 9 pontos, intenção de compra dos consumidores e inferir em questões relacionadas a métodos adequados de conservação, possíveis alterações degradativas e potencial mercadológico. Resultados relacionados a composição das espécies estudas (p<0,05) demonstram não haver diferença significativa nos valores de umidade e cinzas, enquanto que o teor de proteínas e lipídeos e consequente valor calórico foram mais elevados nos exemplares de piraputanga; o teor mais elevado de carboidratos foi observado nos exemplares de tambatinga. No teste de aceitação (p<0,05), os atributos aparência, cor e suculência foram melhor avaliados nos exemplares de tambatinga quando comparados aos de piraputanga. Entretanto, com os valores obtidos pode-se inferir que ambas espécies constituem alternativas de elevado valor nutricional ao consumidor além de apresentarem boa aceitação com aproximadamente 60% dos julgadores demonstrando intenção na compra das espécies.


The production and fish consumption has been growing in recent years, with some species gaining prominence on the national scene as hybrid Colossoma macropomum X Piaractus brachypomum (tambatinga) and Brycon microleps (piraputanga). Data on proximate composition and test acceptance are of paramount importance to infer about the market potential of these species. Thus, the aim of this study was to provide data on the chemical composition, sensory acceptance by hedonic scale of 9 points, consumer purchase intent and infer on issues related to adequate conservation methods, possible degradative and market potential changes. Results related to composition of the species studied (p<0,05) showed no significant difference in the values of moisture and ash, while the protein, lipid and consequent caloric value were higher in specimens of piraputanga; the highest carbohydrate content was observed in tambatinga copies. In acceptance testing (p<0,05), the attributes appearance, color and juiciness were better evaluated in specimens of tambatinga when compared to piraputanga. However, with the values obtained can be inferred that both species are alternatives of high nutritional value to the consumer in addition to having good acceptance with approximately 60% of the judges demonstrating intention in buying the species.

This study aimed to determine which of the eight cheese varieties (Prato, Standard Minas, Gorgonzola-, Moleson-, Raclette-,Gruyère-, Sbrinz- and Reblochon-types) prepared at a dairy processing plant in the state of Rio de Janeiro had higher concentration of biogenic amines (BA) (putrescine, cadaverine, yramine, histamine, spermidine and spermine), to detect which BA were produced at higher oncentrations and to determine if the presence of Enterobacteriaceae, biogenic amine producing bacteria (BAPB) or physical-chemical parameters (pH, titratable acidity, fat, moisture, total solids, protein, ash and chloride) ould be correlated with BA production in the eight matured cheese varieties. Moleson-type cheese (72.50 mg.Kg-1) followed by Standard Minas (107.00mg.Kg-1) showed the lowest levels of biogenic amines. Prato (699.29 mg.Kg-1) and Gorgonzola-type (936.37 mg.Kg-1) cheeses contained larger amounts of BA. Concentrations of tyramine exceeded the maximum permissible limit in all varieties of cheese. Although the presence of potentially BA-producing bacteria was confirmed in all samples of cheese, there was no correlation with BA content produced in cheeses. Gorgonzola-type cheese showed a positive correlation with the amount of BA in the isolates. Gorgonzola-type, Sbrinz-type and Prato cheeses seem to require greater care in monitoring the presence of biogenic amines, particularly because tyramine reached the highest levels in these varieties. Regardless of the analysed cheese, physical and chemical parameters did not affect the amount of BA produced. An assessment of the capacity to produce biogenic amines should be included as a selection criterion for starter cultures for ripened cheeses.
